Camping Recipe: Cast-Iron Sausages and Apples

Ingredients

  • 1 tbsp. olive oil
  • 6 sweet Italian sausage links
  • 2 Pink Lady apples, halved
  • 1/2 red onion, sliced
  • 1/2 head red cabbage, cut into 1/2-inch-thick slices
  • Kosher salt
  • freshly ground black pepper
  • 1 cup of fresh apple cider
  • 2 tbsp. fresh cider vinegar

Instructions:

  1. Wash and dry all your produce. 
  2. Half the apples and slice the red onion thinly.
  3. Slice half of the red cabbage into ½” thick slices.
  4. Heat a large drizzle of oil in a cast iron skillet over your fire.
  5. Toss in the sausages and cook until golden brown, turning them to ensure an even cook. 6-8 minutes approximately.
  6. Transfer the sausages to a plate.
  7. Move the skillet to indirect heat and add the apples, being sure to place them with the sliced side down. 
  8. Fill the skillet with onions and cabbage surrounding the apples, and season with salt and pepper.
  9. Cook until the apples are caramelized and beginning to turn golden brown. Approximately 3-4 minutes.
  10. Flip the apples over to allow the skin side to brown, and return the sausages to the skillet.
  11. Dump in cider and vinegar, and allow the whole thing to simmer for 18-20 minutes or until the sausages are cooked through, and the apples are tender.
  12. Serve hot over a bed of brown rice.
