Camping Recipe: Campfire Cobbler

Ingredients

Filling

  • 3 cups of sliced peaches
  • 2 cups of raspberries
  • 1 cup of blackberries
  • 3/4 cup of granulated sugar
  • 3 tbsp. of cornstarch
  • ½ a lemon’s worth of juice and zest
  • 1 tsp. of pure vanilla extract
  • One pinch of kosher salt

Topping

  • 1 cup of all-purpose flour
  • 2 tbsp. of granulated sugar
  • 2 tsp. of baking powder
  • 1/4 tsp. Of kosher salt
  • 1 stick of cold butter cut into ½ inch pieces
  • 1/2 cup of buttermilk
  • 1 tsp. of pure vanilla extract
  • Vanilla ice cream for serving

Instructions:

  1. Placed a grate over the campfire.
  2. In a large bowl, mix all of the filling ingredients.
  3. Transfer the mixture to a large cast iron skillet.
  4. Whisk together the flour, sugar, baking powder, and salt in a medium bowl. 
  5. Add the butter and use your hands to incorporate until the pieces are pea-sized.
  6. Add the buttermilk and vanilla.
  7. Stir until everything is just combined.
  8. Spoon the mixture on the fruit and sprinkle everything with more sugar. 
  9. Cover the skillet with a lid or with foil.
  10. Place on the grate over the campfire and cook for about 20 minutes. 
  11. Enjoy!
